Some dishes are outstandingly simple where others provide an interplay of textures and flavours.Our guests never leave feeling indifferent.
We only use Almadraba tuna – named so after the environmentally-friendly fishing technique, which has been used since pre-Roman times and is unique to Andalusia, Valencia, Murcia and Ceuta.
We offer a variety of meat, which has been carefully selected for our menu. We mainly offer red meat -cured with marbling fat- a product of the best cattle from the north of the Iberian Peninsula.
The fish we use comes from the best Spanish fishing ports (Ondarroa, Vigo, Coruña, Málaga, Cádiz, Barbate, Vinaroz, etc.), meaning our dishes are created with spectacular produce.
Our professional ham carver only gives our Iberian products from Jabugo the best treatment and care. We have a wide selection to choose from, including: morcón, salchichón, caña de lomo, (pork products) cecina and cecina de León (salted, air-dried beef), mojama de almadraba (salt-cured Almadraba tuna).
We have a whole cart of especially selected cheeses, including a variety of types and ages. Some of our preferred products are from the Pyrenees, such as SerratGros or Emersenda, Valle del Oso in Asturias; or one of the stars from Andalusia, Payoyo. These three recommendations will delight the palate of even the most self-indulgent guests.
Choose a wine from our collection to go with your best dish. We have a wide range of whites, reds and rosés, many being designation of origin products: Rioja, Ribera del Duero, Andalusia, Rías Baixas, France, Italy, South Africa, etc.
